International Flavors & Fragrances (IFF) is an American specialty-chemicals company headquartered in New York City that creates fragrance, flavour, nutrition, and ingredient products sold to manufacturers worldwide. Founded in 1889 through the origins of Polak & Schwarz in the Netherlands, the modern company took its current form in 1958 and is today a member of the S&P 500, generating revenue of $11.5 billion in 2024 across operations in 44 countries. Two landmark deals - the $7.1 billion acquisition of Frutarom in 2018 and the merger with DuPont's Nutrition & Biosciences business in 2021 - transformed IFF from a focused fragrance and flavour house into one of the broadest ingredient conglomerates in the industry.
The oldest strand of IFF traces to 1889, when Leopold Schwarz and his brother-in-law Joseph Polak founded Polak & Schwarz in Zutphen, the Netherlands, with a focus on spices, flavours, and fragrances. The firm grew to 36 sites globally. In 1917, Arnold Louis van Ameringen was hired to open the company's US office in Manhattan; after parting ways with Polak & Schwarz he established his own firm, which became van Ameringen-Haebler (VAH) by 1929 and built a strong reputation in fine fragrance.
In 1958, Polak & Schwarz - which had particular strength in flavours - and van Ameringen-Haebler merged to form International Flavors & Fragrances Inc. The company listed on the New York Stock Exchange in 1964. Over the following decades IFF expanded its scientific capabilities, co-founding the Monell Chemical Senses Center in 1968 and, in 1985, pioneering Living Flower technology - a headspace-capture technique that records the scent of a living bloom in situ and translates it into fragrance ingredients.
In 2000 IFF acquired Laboratoire Monique Remy, a Grasse-based naturals specialist that became IFF LMR Naturals, deepening its access to high-quality botanical raw materials. That same year the acquisition of Bush Boake Allen briefly made IFF the largest flavour and fragrance house in the world by revenue.
The company's most significant expansion came in two steps: the $7.1 billion acquisition of Israeli ingredients group Frutarom in 2018, which added a large portfolio of natural flavour and fragrance compounds, and the 2021 closing of a Reverse Morris Trust merger with DuPont's Nutrition & Biosciences division, a deal valued at approximately $26 billion for the N&B business. The combined entity now spans taste, scent, nutrition, enzymes, cultures, and probiotics, with 22,400 employees and more than 150 facilities worldwide as of 2024.
IFF holds one of the industry's most extensive captive-molecule portfolios - synthetic aroma chemicals developed and owned exclusively by the house. Among the best-known are Galaxolide, a polycyclic musk widely used in fine fragrance and consumer products; Cashmeran, an ambery-woody material with a soft cashmere character; Iso E Super, a cedar-woody captive that became a defining ingredient of the transparent, skin-like woody style of the 1990s and 2000s; and Helional, a fresh marine-floral molecule. The amber portfolio extends to Amber Xtreme and the Ambermor family. These proprietary materials give IFF perfumers compositional tools unavailable to houses working without such a library.
In fine fragrance, IFF operates across the full prestige and mass spectrum, composing anonymously for designer houses, niche brands, and mass-market personal care alike. The house's scientific investment in scent capture dates to 1985, when IFF scientist Dr. Braja D. Mookherjee developed Living Flower technology, allowing perfumers to work from the actual airborne scent of a living plant rather than from extracted absolutes. IFF's Union Beach, New Jersey research facility maintains a 5,000-square-foot greenhouse with more than 1,300 exotic plant varieties to support this work.
The 2000 acquisition of Laboratoire Monique Remy established IFF LMR Naturals as the house's Grasse-anchored naturals arm, sourcing and processing high-quality botanical raw materials for use in prestige compositions. The 2018 Frutarom acquisition layered in a large bank of natural flavour and fragrance compounds, further extending the ingredients palette available to IFF perfumers and flavourists.
