The smell of meringues is not typically extracted from the confection itself but recreated using synthetic aroma chemicals and accords that mimic creamy sweetness, vanilla facets and caramelized sugar effects.[1] Perfumers build this note with materials such as ethyl maltol, lactonic notes, vanillin and other sweet or creamy molecules, sometimes supported by musks or light woods for body. The inspiration comes directly from patisserie traditions where meringues are made from beaten egg whites and sugar and gently baked to a crisp shell and soft interior.
