White thyme generally refers to a specific chemotype or fraction of thyme oil, often from Thymus serpyllum var. albus or Thymus vulgaris that has been steam distilled twice or otherwise refined. This processing reduces harsher phenolic components, yielding a clearer, 'whiter' aromatic profile. The plants are typically grown in Mediterranean regions such as Spain and are harvested for their flowering tops, which are steam distilled to produce the essential oil before further rectification.
Perfumers use white thyme as a top to heart note to impart a clean, aromatic-green brightness without the aggressive medicinal edge of some thyme oils. It is common in spa-style accords, tea and linen fragrances, and modern fougère or aromatic compositions where it can bridge citrus, tea, lavender, and woody notes.
