About

Galangal is the rhizome of Alpinia officinarum, a relative of ginger from southern China and southeast Asia. It smells spicy and rooty, between ginger and cardamom, with a camphoraceous lift from cineole and a dry, earthy-woody base. It is more medicinal and less sweet than ginger. It adds a cool, savoury edge to oriental and gourmand-spice accords.
