Golden Delicious is the low-acid, honey-toned end of the apple range. Food-flavour sources describe it as 'sweet and floral with very little acidity' and reach for honey where they reach for tartness in other cultivars. Its signature volatile is hexyl acetate, described in perfumery trade sources as green-fruity, leaning towards pear and banana rather than the sharp green-apple esters of a sour cultivar. It is scored here as ripe yellow apple flesh: sweet, soft-edged, faintly floral, with the green kept to skin level.

Fruity leads and it is ripe yellow flesh rather than crisp bite. Mashed's line, 'sweet and floral with very little acidity', is the single most repeated claim about this cultivar. Green sits well behind it, skin-level and not sap-level, because hexyl acetate is described as a 'green-fruity profile reminiscent of crisp apple and pear' where green modifies fruit rather than leading. Honeyed is what actually separates this from the other apples: two sources reach for honey, and no source reaches for tartness. Floral is carried at naming level because both the flavour source and the aroma-chemistry source say floral independently, one about the fruit and one about its defining ester. Under those, a soft sweet_vanillic warmth, a faint aldehydic lift off the skin and a trace of tropical from the ester's banana lean sit below structural level. Sour is held rather than zero, because 'very little acidity' is a claim of a small amount and not a claim of none.

Origin

The fruit of Malus domestica cv. Golden Delicious, a chance seedling found in Clay County, West Virginia in the 1890s and now one of the most planted apples in the world. There is no Golden Delicious extract in perfumery. No manufacturer or trade house (Givaudan, Firmenich, IFF, Symrise, ScenTree, Eden Botanicals) publishes an olfactive descriptor for a material of that name. The note is a reconstruction built from esters, and the aroma-chemistry literature identifies hexyl acetate as the ester that carries this cultivar's identity.
