About
Peppery notes is the sharp, dry, prickling half of spice, named as a quality rather than as one berry. It covers black pepper, green pepper and pink pepper at once. Every source that places it in the pyramid puts it at the top, and every source that names a sweet or resinous spice in the same breath treats that as something other than peppery. Cardamom's sweet and woody is contrasted with angelica seed's peppery inside a single sentence.

Origin
An accord term, not a material. Parfumo lists Pepper, Spicy notes and Peppery notes as three separate sibling olfactory qualities rather than nesting one inside another. The CA Perfume ingredient guide names the compounds behind the opening phase it calls Peppery Spark: gingerols from ginger, alpha-phellandrene from pink pepper, and piperine from black pepper. It keeps a later Resinous Depth phase, built on eugenol, sabinene and coumarin, separate from it.

Attested on 9 Parfumo entries across 8 brands and on no Fragrantica entry. A Parfumo reviewer of Comme des Garcons Blackpepper reports the pepper gone after two and a half minutes, leaving a warm, gentle, well-shaped wood, which is the shape this term usually takes in a formula.
