Apricot kernel smells of bitter almond, the same sharp kernel note found in marzipan, not of the soft apricot fruit around it. A faint fruity note sits far in the background, more a memory of the fruit than a real presence. There is a slight sweetness alongside the bitterness, and a soft, powdery quality similar to marzipan. The bitterness is what stands out most, not the fruit itself.

Origin
Prunus armeniaca seed. The bitter-almond smell comes from benzaldehyde released from the kernel, the same compound that gives Disaronno and other amaretto their flavour.
