Cassia has a warm, sweet, and spicy scent that is very similar to cinnamon but is generally considered to be more intense, slightly harsher, and with a distinct woody undertone. It brings a rich, aromatic warmth to fragrances, often evoking the feel of spiced baked goods or mulled wine. Cassia is frequently used in oriental and gourmand compositions to add depth and spicy sweetness.
