Damascenone, a rose ketone aroma chemical. It smells of rose jam and baked apple.

Scent Profile

Damascenone smells of rose, but not a fresh petal. It is rose jam left warm on a counter: fruity and honeyed, with plum, grape and baked apple under the flower. A faint tobacco tone gives it depth.

A rose ketone (CAS 23696-85-7). dsm-firmenich sell it as DAMASCENONE and DAMASCENONE TOTAL.

Usage in Perfumery

Perfumers use it at very low doses to add richness, fruit and radiance to rose, fruity and other accords. IFRA limits the rose ketones together in fine fragrance.
