Hassaku is a Japanese citrus, a natural pomelo x mandarin hybrid found in Hiroshima Prefecture around 1860. The note is the peel and juice of the fruit. It smells like a gentler grapefruit: bright and tangy first, then sweeter and rounder, with a bitterness that never leaves.

Citrus hassaku, the fourth most cultivated citrus in Japan by production volume. The fruit has a thick peel, hard flesh and little juice, but low acidity. It is picked in winter and eaten weeks or months later, once the post-harvest bitterness has softened. Takasago's own GC/MS work on Japanese citrus varieties puts nootkatone at 18.1% of hassaku's oxygenated aroma fraction, and names nootkatone directly as the characteristic aroma compound of grapefruit. Natsu mikan shares that trait at 11.4%. Iyokan, Kiyomi, Shiranui and Sanbokan in the same study do not. As with all citrus, the bulk of the volatiles are terpene hydrocarbons such as limonene, and the character sits in the small oxygenated remainder.

Usage in Perfumery

One Fragrantica attestation and no Parfumo placements, so this is a rarely used note. It works where a grapefruit opening is wanted without grapefruit's sulphurous bite: the same bitter-fresh direction, softer and sweeter. It is read as mandarin orange, which fits the parentage more than the chemistry.
