A prepared food, always reconstructed in perfumery. The smell of a real pancake comes from the Maillard reaction on a hot griddle plus the dairy in the batter: 2-acetyl-1-pyrroline gives the bready warmth, furans and pyrazines give the caramel and toasted-grain facets, and diacetyl from cultured buttermilk gives the buttery tang. Every source used describes the sweet American buttermilk griddle cake, not a crepe, an okonomiyaki or a dosa, which smell different.
