Pistachio ice cream is a gourmand accord, not an extract. Two houses sell it under that exact name and both describe the same three things: a roasted nut, churned dairy, and sugar. Demeter's own line for it is 'slightly nutty, slightly sweet, cool and creamy'. It sits between the raw nut and the dessert, cooler and rounder than either pistachio or pistachio cream.

Scent Profile

Nutty leads, and both houses put the nut first. Demeter opens with 'slightly nutty' and DUA names 'Roasted Pistachio and Almond' as 'the warm heart of the fragrance'. Lactonic runs almost level with it and carries the frozen dairy. DUA's dedicated ice-cream note is added, in its own words, 'to even out the nutty edge' and 'create a velvety finish, making it sweet and creamy', and Demeter ends its line on 'cool and creamy'. Sweet_vanillic is third. It is the sugar and the vanilla bean, and one Demeter reviewer calls the result 'VERY sweet smelling'. Below sit three traces. Cooling_mentholic is temperature and not menthol, and it is the one facet both houses state independently: 'cool and creamy' and 'a cool, rich scoop on a hot day'. Green is the pistachio kernel showing through the cream, well under the 0.45 that published pistachio carries, because the dairy buries it. Fruity records a single reviewer who says the scent 'smells more like cherries and almonds to me'.

Origin

Composed. No material is extracted from ice cream. Perfumers build it from the same parts as any frozen-dessert accord: lactones for the churned dairy, vanillin and ethyl maltol for the sugar, and a pistachio or almond nut accord on top. DUA Fragrances prints the construction in its own copy, naming a 'Pistachio Ice Cream note' that it adds beside a separate roasted-pistachio-and-almond 'Nutty Accord', plus almond milk, vanilla bean and whipped cream.

Usage in Perfumery

A heart-to-base gourmand. DUA uses it to soften a roasted-nut accord it names separately in the same paragraph, so the note's job in a formula is to cool and round a nut that would otherwise read as dry and toasted. It sits with vanilla, almond, whipped cream and milk. Demeter sells it as a soliflore-style single-idea scent in cologne and perfume-oil form.
