Origin

Two things share this name and they smell different. The drink is crushed walnut kernels blended with water. Food-science work on it (Liu et al., LWT 2022) reports that the untreated product 'is characterized by a high content of aldehydes which provide a heavier grassy taste and bad flavor', and that manufacturers use mild fermentation to cut the aldehydes and raise the alcohols, acids, esters and ketones. The perfumery note follows the corrected drink, not the raw one. Whether the fragrance material is an extract or an accord built from a nut base and a dairy base was not established.

Usage in Perfumery

A base-to-heart gourmand for comfort and skin-close work. Use it where walnut alone is too dry and too toasted, and where milk alone has no body. It sits under vanilla, tonka, coffee and soft woods.
