Soy milk is the strained water extract of soaked, ground soybeans. As a fragrance note it is a beverage reference, not a dairy one.
Scent Profile
Soy Milk smells milky and starchy, like thin plain milk with steamed rice behind it. It is lighter and less rich than dairy milk. A soft nutty, oatmeal-like note runs underneath, with a faint green, beany edge from the bean. A light touch of sugar sweetness rounds it out. Underneath sits a dry, hay-like note, like dried grass or cured straw.

Origin
Soy milk is made by soaking soybeans, grinding them with water and straining out the solids. Raw soy milk smells beany. The enzyme lipoxygenase oxidises the bean's fat as it is ground, and the products include hexanal, hexanol and pentanol. Commercial soy milk is processed to remove most of this smell, so sweetened soy milk tastes oatmeal-like and nutty instead. No fragrance house sells a soy milk material. The note is an accord.
