Cold butter rubbed into plain flour, then baked. The smell of a pie shell out of the oven: melted butter first, baked flour under it, a light toasted sweetness at the end. It is short, not flaky. The fat is worked through the dough rather than folded into layers, so it never gets puff pastry's crisp buttery lift.

Scent Profile

Lactonic leads and every source agrees on why. Fragrantica: 'the predominant smell is that of melted butter, warm and slightly sweet. It is a fatty aroma in a good way, enveloping, comforting, full-bodied.' Wicked Good opens its pie-crust accord on 'a buttery burst of golden pastry'. Wikipedia credits the butter with the flavour. This is set just under the published butter's, because the flour dilutes it. Nutty is the baked and browned part, from Wicked Good's 'toasted sugar, golden crust' base. It is kept below the published biscuit's 0.65, because biscuit is shortbread and carries more caramelisation than a pie shell. Powdery is the flour, which is half the material by the recipe and which Wicked Good puts in the heart as 'baked flour'. It sits well under the published flour note's 0.78 because baking takes the raw talc quality off it. Sweet vanillic covers Wicked Good's 'sweet vanilla' heart and Fragrantica's 'slightly sweet'. It is deliberately half the published sweet-pastry's 0.70, because the whole point of plain shortcrust is that the sugar is not there. Wikipedia's own contrast makes this explicit: pate sablee 'is made with more sugar'. Below the line, creamy woody for the doughy body, and small amounts of warm spice, sour and mineral for the baked edge, the faint dairy tang of the butter and the raw-flour chalkiness that survives baking.

Origin

A kitchen preparation, not a raw material. Wikipedia gives the ratio as about twice as much flour as fat by weight, with the fat rubbed in and bound with a little ice water. Butter carries the flavour and lard the texture. Perfumery has no distilled shortcrust. Commercial versions are built accords. Wicked Good's 'Homemade Pie Crust' oil is one such build and is the only source found that gives a scent breakdown.

A gourmand base for fruit and custard compositions, where it reads as the shell around the filling. Attested on 7 Fragrantica entries, which file it under sweets and gourmand smells. Distinct in use from the published puff-pastry, which is the flakier and more butter-forward laminated dough, and from sweet-pastry, which is the sugared pate sablee.
