Best known for his work at Rochas in the 1970s and 1980s, Mamounas often combined bright citrus and aldehydic openings with complex floral hearts and mossy, woody bases, as seen in Eau de Rochas and Lumière. In Byzance and Macassar he explored richer amber, spice and woods, showing a penchant for dense, structured orientals alongside fresher chypre and aromatic styles.

Nicolas Mamounas is a French perfumer closely associated with the house of Rochas, which he joined in 1970, succeeding Guy Robert as in-house perfumer. For Rochas he created Eau de Rochas (1970), a fresh aromatic women's fragrance that became one of the brand's key pillars. He is also credited with the original Lumière (1984) for Rochas, an aldehydic floral composition, and co-composed Byzance (1987) with Alberto Morillas. Other notable Rochas works attributed to him include Mystère (1978) and the men's fragrance Macassar (1980), which he co-authored with Roger Pellegrino.
