About

Balsamic vinegar keeps the sharp acetic top of vinegar but adds a whole aged layer on top of it. Cooked grape must brings real sweetness. Years in a sequence of wooden casks bring wood, caramel, prune and vanilla. It is sourer than a fruit note and sweeter than plain vinegar.

Scent Profile

Balsamic Vinegar opens sharp and sour, like vinegar, but the acidity sits balanced against real sweetness rather than standing alone. Underneath is a cooked, dried fruit note, more prune and fig than fresh berry, next to a honeyed, syrupy sweetness from the reduced grape must. Caramel and vanilla and a dry woody note from years in oak casks round it out, with a faint boozy, wine-like edge underneath.

Origin

Reduced and fermented grape must, aged in a graded series of wooden casks. Oak, chestnut and cherry each add something: vanillin and fig and prune notes from the oak, tannin and berry lift from the chestnut, and benzaldehyde stone-fruit tones from the cherry. The barrels are why the profile is not just vinegar.
