Tayberry is a Rubus hybrid of blackberry and raspberry, bred in Scotland in 1979. As a note it is a dark red-purple berry: juicy and fruity first, tart underneath, with a sweet, floral aroma that grows stronger as the fruit ripens, over an earthy undertone. Fragrantica puts it as sweeter than the loganberry.

Origin
Rubus fruticosus x Rubus idaeus, raised at the Scottish Horticultural Research Institute at Invergowrie on the River Tay and released in 1979. The plant does not occur in the wild. There is no tayberry-specific aroma chemical and no manufacturer datasheet for one.
Usage in Perfumery
A heart note for fruity and fruity-floral compositions that want a more floral and earthier berry than raspberry. It works where a red-fruit accord needs an earthy anchor rather than a candied one.
