The pulp of Diospyros nigra, a Central American fruit in the persimmon family. Ripe flesh is dark brown and soft. It smells sweet, creamy and mild, with a chocolate or molasses impression that people argue about.
Scent Profile
Black Sapote smells of ripe, dark fruit pulp, sweet and mild rather than sharp. Caramel and vanilla give it a dessert-like sweetness, and a chocolate or molasses impression runs through it, though tasters disagree on whether that is real or just the dark colour talking. Some find a honeyed note instead, over a soft, custardy creaminess and a faint tropical, slightly fermented edge.

Origin
Not a true sapote. Diospyros nigra sits in Ebenaceae with the persimmons, not in Sapotaceae with mamey. There is no commercial essential oil. The published perfumery note is a compounded impression of the ripe pulp.
Usage in Perfumery
A heart note in gourmand and tropical-fruit work, where it adds a soft dessert richness. It is a rare note and the usage claims for it are thin.
