About

The smell of wheat dough cooked in hot fat. It is the browned, oily crust of a doughnut, churro or funnel cake, before any glaze or sugar goes on. No fried dough extract exists. The note is a built gourmand accord.

Scent Profile

Fried Dough smells of wheat dough cooked in hot fat, the browned, oily crust of a doughnut before any sugar goes on. A deep-fried, fatty note and a rich, buttery lactonic note come from the frying. The crust reads as toasted and roasty, close to popcorn, rather than sweet. Sugar and icing are separate notes. A faint sour note and a dark, smoky edge show at the crust's darkest point.

Origin

Prepared food, not a material. In real fried dough, three odorants do most of the work: δ-decalactone (oily, peach-like), 2-acetyl-1-pyrroline (roasty, popcorn-like) and (E,E)-2,4-decadienal (deep-fried). Perfumers rebuild it as an accord, with lactones or furanones for the fried dough and caramel-type sugars such as ethyl maltol.

Usage in Perfumery

54 Parfumo perfumes on 2026-10-10, first in 2012. It usually runs through the whole perfume. It is used in carnival and fairground gourmands. Shop Lavana's Glazed Donut puts it beside Buttercream, Sugar icing and Vanilla. A House on the Moon's Carnival in Zero G pairs it with Cotton candy. In both it is one named part among several, not the whole pastry.
