There is no butterscotch extract. The note is an accord, and its main driver is maltol, which perfumery suppliers list with 'butterscotch' among its own descriptor terms. PerfumersWorld describes maltol as 'sweet caramel cotton-candy jam fruity burnt bread-nuances tasteful burnt-sugar candy-floss vanillin-modifier vanilla coumarin strawberry cotton candy butterscotch pineapple milk toffee chocolate'. Scentspiracy adds that it gives 'a signature pineapple-strawberry aroma with a toasted-sugar nuance'. Ethyl maltol, vanillin and lactones fill out the buttery side. Wikipedia keeps the confection itself anchored to 'brown sugar and butter', with cream, vanilla and salt as options, and notes the word is used for that flavour even when no sweet is involved.
