About

Condensed milk is cow's milk with about 60% of its water taken out and a great deal of sugar added. Its smell is the milk lactones concentrated to an extreme - a gas-chromatography study measured them at 35 times the level in liquid milk - over a thick sucrose sweetness. It is the most lactonic gourmand note in this vocabulary, and it is not a caramel.

Scent Profile

Condensed milk smells of milk pushed to an extreme: a thick, creamy, lactonic richness over a heavy sugar sweetness. Underneath is the milk fat itself, a fatty, waxy weight rather than a light one. Small traces of peach-like fruit, toasted nut, burnt sugar and a faint sourness show through the sweetness.

Origin

A prepared dairy product, reconstructed for perfumery. The characteristic odour develops during manufacture. Evaporating and canning the milk concentrates delta-decalactone and delta-dodecalactone, which a sniffing panel named as the main contributors. Delta-dodecalactone smells of condensed milk on its own. Perfumery accords are built on milk lactone, methyl laitone, vanillin and ethyl vanillin, with a trace of butyric material for real dairy. One published formula adds a musk complex for a fine-fragrance finish.

Usage in Perfumery

Perfumers use condensed milk as a base note when a composition needs dense, sweet dairy that does not read as caramel. It thickens gourmand accords built on vanilla, tonka and caramel. A little reads as skin-warm comfort. A lot turns syrupy and dominates everything around it.
