The Milanese Christmas cake: a tall, slow-fermented sweet bread, buttery and vanilla-soft, studded with candied orange peel and rum-soaked raisins. The bakery smell and the candied citrus arrive together, which is what separates it from plain sweet bread.

Scent Profile

Sweet vanillic leads: the sugared crumb and the vanilla every source names. Lactonic sits with it and is the butter as the cake carries it, dairy fat with the sugar already in it. Waxy_fatty is the other half of that same butter, the plain richness with no sweetness in it. Carluccio's puts it first of everything ('a buttery richness'), and describes the candied peel as 'cutting through the richness'. Scent Split has 'buttery dough' and a 'luscious, buttery bread sensation'. Before this facet existed the two halves were one number, so lactonic comes down from as waxy_fatty comes up from. Fruity is the candied peel and the rum-soaked raisins together, the studded fruit that makes the cake. Citrus is narrower and is candied bitter orange rather than fresh juice, so it is warm and peel-like, not sharp. Nutty carries the baked crust, the browned outside of a yeasted loaf rather than any actual nut. Boozy is the rum the raisins soaked in, clear in two sources and secondary in both. Below the naming line, a faint tartness from the long fermentation and a trace of earthy sweetness sit under the whole thing.

Milano Fragranze's Panettone is the closest thing to a published fragrance-industry reading of the smell. Its note list is bitter orange, mandarin, ginger, carrot seed, davana, rum, everlasting flower, tagete, vanilla and vinyl guaiacol.
