About

Lollipop is boiled sugar on a stick, flavoured to read as fruit. No source treats it as an olfactive referent of its own. The flavour trade files it inside a single 'candy note' style that also covers gummies, jelly beans, fruit chews and bubble gum, and describes that style as two layers: a bright top of fruity esters and a longer heart of maltol-type and vanillin-type materials.

Scent Profile

Lollipop smells bright, sweet and fruity, like artificial red-and-yellow fruit rather than fruit off a tree. Alongside it is a boiled-sugar sweetness with a caramel edge, the maltol-and-vanillin heart that lasts longest on the tongue. The two sit almost level, fruit up front and sugar underneath. A faint sour, citrus-like tang cuts through both.

The Society of Flavor Chemists beginner guide defines the candy note as 'the sweet, bright, playful, artificial-fruit-like impression that reminds people of hard candy, gummies, lollipops, jelly beans, fruit chews, bubble gum', and is explicit that it 'is not simply sweetness'. It names the build: fruity esters, lactones, aldehydes, ketones, vanillin-type materials, maltol-type materials, and sometimes cooling, acidic or floral modifiers. Ethyl maltol carries the heart. Two suppliers describe it in the same words: 'intensely sweet, cotton candy aroma with caramellic undertones, subtle fruity facets' and 'strong sweet, caramel-cotton candy scent with fruity-strawberry nuances'.

Usage in Perfumery

A gourmand top-to-heart gesture in sweet and fruity compositions, usually meaning artificial rather than ripe fruit. Attested 4 times on Parfumo across 2 brands and not at all on Fragrantica. Two brands out of four uses is a narrow base, so much of the attestation may be one house's habit.
