Peaty whisky is the smoke half of Islay-style Scotch laid over the boozy, caramel base of the spirit. The smoke is phenolic and medicinal, closer to tar and antiseptic dressing than to a wood fire. Damp earth runs under it. It is neither the published whisky note nor the published peat note, and it needs both.

Scent Profile

Smoky and boozy are both dominant, and each has its own source. Smoky is phenolic rather than woody: the whisky-chemistry source names phenols 'characterized by smoky, tar-like and petroleum aromas that evoke a medicinal impression', and adds that people who dislike it call it the smell of sticking plasters. Boozy carries the spirit underneath, from the 'Malted Barley' top and the oak-barrel base of the one commercial accord found. It is scored below the published whisky note's 0.92 because the peat layer takes room the plain spirit does not have to give. Earthy is the peat itself, 'reminiscent of the peat-covered landscapes of Scotland'. It sits below the published peat note's 0.82 because here the bog is under a drink rather than being the whole subject. Dry_woody is the cask. Sweet_vanillic is the oak-derived caramel and vanilla warmth that every whisky description leads with, kept well below whisky's 0.62 because both sources here say the peat character is voiced by cade and labdanum, not by vanillin. Leather comes from cade, named as 'leathery and smoky'. Mineral is the wet-stone edge peat carries. Below sit amber_resinous for the labdanum, fruity for the dried fruit of the spirit, tobacco_hay for the hay absolute in the accord, nutty for toasted malt, mossy_chypre for the bog, and sour.

Origin

Not a traded raw material. The character comes from the drink: damp malted barley is dried over a peat fire, and the peat smoke leaves phenols in the grain. Those phenols survive fermentation, distillation and cask ageing. Perfumers build the note as an accord. The one commercial example found, PRIN's 'Scotch Peat', uses a malted-barley top, peat itself as the centre, cade for the leathery-smoky edge, labdanum for warmth and an oak-barrel base.

Usage in Perfumery

A base note for smoke-and-spirit accords. It gives a boozy warmth that a plain smoke material cannot and a phenolic bite that a plain whisky accord cannot. Works against leather, tobacco, hay and dry wood. Use it where a whisky note alone reads too sweet and a peat note alone reads too cold.
