Plai is the oil steam distilled from the rhizome of Zingiber cassumunar, a ginger relative grown in Thailand. Its terpinen-4-ol content makes it read differently from common ginger. It smells like a green, peppery ginger with a cooling medicinal edge and a faint rooty earthiness. It is fresher, sharper and less sweet than Zingiber officinale.
