Rice pudding is a gourmand accord, not a distilled material. It is the plain rice note with a dessert built on top of it: milky and creamy from the lactonic body, sweet from vanilla and sugar, and dusted with warm baking spice. The starchy, faintly nutty grain that plain rice carries stays underneath and stops the accord reading as straight vanilla custard.

Scent Profile

Sweet vanillic leads: this is the sugar-and-vanilla layer that separates rice pudding from plain rice. Lactonic is nearly as strong and supplies the milky, cooked-cream body. Nutty carries the starchy grain underneath, the cereal note that keeps the accord from collapsing into custard. Warm spice sits on top as the cinnamon or cardamom dusting that every source names. Beneath those, powdery softness, a trace of clean musk, a little honeyed sugar and a thin coconut-side tropical touch round it off.

Origin

There is no rice pudding oil. Perfumers build the note from lactones for the milk, vanillin and sugar-type sweeteners for the body, and a cinnamon or cardamom facet for the spice, over a starchy grain accord. Two trade sources describe the construction: The Parfum Apothecary sells a rice accord as "grainy, warm, starchy, lightly herbal and spicy", and Oak Manor Fragrances says rice milk and rice pudding are "more overtly gourmand" than plain rice and "may include vanilla, coconut, lactonic notes, cinnamon or sugar".

Usage in Perfumery

Used in the heart and base of cosy gourmands, where it does the job of a milk-and-vanilla accord that is not simply custard. DefineMe's Nearly Noon pairs the "spiced warmth of rice pudding" with sandalwood and vanilla. It sits well against sandalwood, fig, almond and cardamom, and it can carry a whole comfort composition without a fruit note.
