Graham cracker is a warm baked-goods gourmand: honey and brown sugar over cinnamon, with a dry toasted-grain crumb underneath. Three fragrance houses that sell it agree on the same four words - honey, cinnamon, vanilla, brown sugar. It is sweeter and more honeyed than plain biscuit, and less spice-led than speculoos or gingerbread. The grain is present but it is a toasted wholemeal crumb, not raw wheat.

Scent Profile

Sweet_vanillic leads because vanilla and brown sugar are named by all three sellers and both published pyramids put them in the base. Honeyed is next and is the facet that separates this note from every other biscuit in the vocabulary: Demeter names honey and molasses, Wicked Good names wild honey as a heart note, and honey is what the cracker is actually sweetened with. Warm_spice is cinnamon, the only spice all three sources name and the one Wicked Good puts on top. Nutty is the toasted wholemeal crumb - Fragrantica's own gloss is 'grainy and sweet', and it sits below the level of biscuit at 0.65 because the honey and sugar cover it. Lactonic is the butter Indigo Fragrance names twice. Below the naming line: tobacco_hay for the dry grain, powdery for the crumb, fresh_spice for Indigo's unnamed 'other yummy spices', citrus for the orange zest only Indigo lists, and boozy and smoky each for molasses. None of the three sources is analytical, so every value here is read off marketing copy and carries a spread of 0.12 to 0.20.

Origin

A wholemeal wheat cracker sweetened with honey or molasses and baked, from the United States. Named after Sylvester Graham, who milled the coarse flour it is made from. There is no distilled oil and no natural extract. Every perfumery version is a built accord, and the two published builds show it: Wicked Good gives cinnamon on top, wild honey and a 'graham flower' heart, then brown sugar and vanilla in the base. Demeter names honey, molasses, cinnamon and vanilla in one line.

Usage in Perfumery

2 Fragrantica placements, none on Parfumo. Fragrantica files it under sweets and gourmand smells and glosses it 'grainy and sweet'. Outside fine fragrance it is a staple of candle and soap fragrance oils, where it anchors s'mores and cookie-jar accords. Demeter sells it as part of a Virtual Cookie Jar set.
