Churros is a gourmand accord in three parts: fried dough, cinnamon sugar, and a soft vanilla-musk base. It smells of warm dough that has been through hot oil and then rolled in cinnamon and sugar, with caramelised edges. It is sweeter than a plain cinnamon note and spicier than a plain fried-dough note, and no source describes it as either one alone.

Origin

A composed accord with no natural raw material behind it. The dough side comes from the same maltol, furanone and lactone chemistry that builds doughnut and pastry accords. The spice is cinnamon, either cassia oil or cinnamaldehyde. Sweet Essentials publishes its build directly: fried dough and vanilla beans in the middle, cinnamon and a raw sugar accord above, musk blended with vanilla underneath.

Usage in Perfumery

A base note for gourmand compositions, usually the warm centre a fragrance is built around rather than an accent. It sits well with vanilla, tonka, caramel, coffee and milk notes, and with cinnamon-forward spice accords that extend it upward. Because the cinnamon is genuinely spicy it can carry more citrus or aromatic lift on top than a plain sugar gourmand would tolerate.
