Rum Ether
Note Profile
About
Burnt woody rum with caramel
Scent Profile
Rum ether smells of dark rum, with a burnt, woody and slightly acidic opening. Caramel sweetness and a brandy and whisky warmth sit inside it. A smoky, scorched-wood edge runs through, with a faint meaty hint. It fades within minutes.

Origin
Rum ether, also called ethyl oxyhydrate, is CAS 8030-89-5 and FEMA 2996. It is a mixture, not one compound. It is made by reacting ethyl alcohol with the aqueous distillate from the destructive distillation of wood (pyroligneous acid), then distilling the product. It is not the solvent diethyl ether. Some sources, among them a study of rum odorants, also call acetal (1,1-diethoxyethane, CAS 105-57-7) 'rum ether'. That is one compound and not this mixture. This note follows FEMA 2996 and the suppliers, which sell the wood-vinegar product.
Usage in Perfumery
Perfumers and flavourists use it for a dark rum and brandy effect in boozy and gourmand accords. It acts as a very short-lived top note. The original material is now hard to buy, and Firmenich sells a replacer base for one-for-one use.
