Origin

A confectionery reference, not a material. The fizz in a sherbet sweet is a real reaction. An edible acid such as citric or tartaric meets a carbonate base in saliva and releases gas. Perfumery cannot copy the gas, so fragrance oils copy the tang instead. A perfumer builds the note from strawberry esters, ethyl maltol for the candy sugar and a sharp, acidic lift for the fizz.

Lattafa's Yara Candy, the best-known user, places it in the heart with gardenia, over a vanilla and musk base. It gives a sweet fruity composition a sour, sparkling edge.
