Strawberry fizz candy is a sweet-shop note: red strawberry sugar with a sherbet tang cutting through it. The sour edge is the point. Plain strawberry candy is sweet all the way down, and this one bites first. Think of a fizzy strawberry sweet that crackles on the tongue before the sugar arrives.

Scent Profile

Fruity is red strawberry and it leads, because every source that names the fruit names it first. Sweet_vanillic is the boiled-sugar candy shell, the same register as the published strawberry-candy but held lower here so it does not swamp the acid. Sour is the whole reason this note is not strawberry-candy. Wikipedia's sherbet-powder entry gives it directly as 'fizzy light tangy crisp sour', and the Pure Scented oil calls the same effect 'unmistakable tang'. Aldehydic is the effervescence itself, the sparkle rather than a smell, scored the same way the published gin-fizz scores its bubbles. Below the naming line: a small citrus from the citric acid that makes the fizz work, a light honeyed roundness, a trace of strawberry's green leaf and a thin lactonic softness.

A confectionery reference, not a material. The fizz in a sherbet sweet is a real reaction: an edible acid such as citric or tartaric meets a carbonate base in the presence of saliva and releases gas. Wikipedia describes the result as 'fizzy light tangy crisp sour'. Commercial fragrance oils translate the effect rather than extract it. Pure Scented's sherbet-lemon oil describes 'a fizzy sherbet twist' that adds 'unmistakable tang' over citrus and berry. A perfumer builds the note from strawberry esters, ethyl maltol for the candy sugar, and a citric or acidic top for the fizz.

Attested in 6 Fragrantica-listed fragrances and absent from Parfumo. It is a gourmand top-note accent. It sits above a sweeter fruit base and provides the opening lift, then hands over to whatever carries the drydown. It is not a note that holds a composition on its own.
