Strawberry flower is the blossom of the strawberry plant, not the fruit. Its main volatile, p-anisaldehyde, smells sweet, powdery and floral with an aniseed edge, and is described with hawthorn and mimosa notes. The fruity smell of strawberry belongs to the fruit, not the flower.

Origin

The blossom of Fragaria x ananassa. A headspace study of live strawberry flowers, published in PMC, found the volatile blend 'dominated by aromatic compounds and terpenoids', led by 4-methoxybenzaldehyde, better known as p-anisaldehyde. Benzaldehyde, benzyl alcohol, methyl salicylate, limonene and decanal follow. No supplier sells a strawberry flower material.

Usage in Perfumery

Not sold as a perfumery material. It appears as a named note in finished fragrances, where it is built rather than extracted. Its main compound, p-anisaldehyde, is used in hawthorn, lilac and cherry blossom accords.
