A gourmand dessert accord. Thick cream-cheese dairy over a toasted graham-cracker base, sweetened with vanilla and brown sugar, with a tang that keeps it off a plain milk note.
Scent Profile
Lactonic leads and all four sources put it first: 'creamy notes of smooth cream cheese', 'cream cheese, vanilla, butter, condensed milk', and the academic source's finding that fresh cream is the main driver of cream cheese aroma. Sweet_vanillic is the second thing both fragrance suppliers name, and one of them makes vanilla the base of its pyramid outright. Nutty is the graham cracker crust, which all three fragrance and flavour sources mention and one calls 'pronounced'. It sits below the published `biscuit` at 0.65 and about level with `pancake` at 0.50 because the crust is a layer here, not the subject. Sour is the facet that makes this cheesecake rather than cake: the primary source lists 'acid' and 'sour' among the typical flavour notes of processed cream cheese, and its carrageenan samples were separately perceived as 'salty' and 'sour'. That number is the only one in this vector with a non-marketing source behind it. Under the naming line, honeyed is the brown sugar and the honey in a graham cracker, tropical is one flavour house's 'hint of coconut' and nothing else, and animalic and sulphurous carry the 'cheese' descriptor at the low end that fresh cream cheese earns, far under the published `cheese` at animalic. Fruity is held down on purpose. Every supplier talks about fruit, but they are all talking about what to blend it with, not what it smells of. Citrus and warm_spice are not asserted by any source; they are low non-zero because a lemon-and-cinnamon reading of cheesecake is common and nobody here denied it.

Origin
Not an extraction. Cheesecake is a compounded accord sold by candle and flavour suppliers as a finished blend. Community Candle Supply describes it as capturing 'the irresistible aroma of a freshly baked New York-style cheesecake' and publishes its own pyramid: 'Top notes: Brown Sugar', 'Middle notes: Graham Cracker', 'Bottom: Vanilla'. The dairy half has an analytical basis: a 2023 study of processed cream cheese models found that 'fresh cream is one of the main drivers of the aroma of processed cream cheeses', driven by 'octa-3,5-dien-2-one and octane-2,3-dione'.
Usage in Perfumery
A base for other gourmands more often than a soloist. Two suppliers report the same commercial fact independently. Community Candle Supply's customer: 'Great blender. I sell almost no straight cheesecake, but this has been a very good seller when blended with fruit scents.' Indigo Fragrance: 'Mix with strawberry, cherry, chocolate etc. to come up with endless combinations of cheesecake fragrances.' Attested 13 times on Fragrantica and absent from the other note list.
