All three sources say the same thing in different words: the flavour database calls the profile 'dominated by creamy notes' and links it to 'dairy-derived flavor notes', the candle supplier writes it into a dessert accord as the dairy layer, and the community source asks for something 'very lactonic'. Sour is the second facet and it is what makes the note identifiable. Two sources name the tang directly - 'creamy, mild, and slightly tangy' and 'tangy cream cheese' - and the third asks for 'realistic sourness and tang'. It is held below 0.5 because the same flavour source calls the material 'mild', which rules out the sharp fermented end. Sweet_vanillic sits and no source credits cream cheese itself with sweetness. Origin

The referent is fresh, unripened soft cheese made by acidifying cream and milk with a lactic starter. Perfumery does not distil it. The note is built as an accord from lactones and short-chain dairy acids, and the flavour trade sells a matching cream cheese compound for food use.

Usage in Perfumery

It sits in the heart of gourmand and dessert accords, most often under cheesecake, frosting and baked-good themes. The tang is what it contributes. Perfumers use it to stop a sweet dairy base going flat, and pair it with berry, citrus and biscuit notes.
