About
Iced coffee is coffee served cold, either hot-brewed and poured over ice or brewed cold and strained. A sensory panel measured the cold-brewed kind as sweeter, fruitier and more rum-like in odour than espresso, and lower in coffee, smoky and chocolate odour. So this accord is a coffee note pulled away from roast and towards sweet fruit and spirit. Commercial iced-coffee fragrance oils add vanilla, whipped cream and a cooling top note.
Scent Profile
Roasted coffee and cacao lead, but lower and softer than in espresso. A sweet vanillic tone follows, measured by the panel as odour sweetness rather than taste alone. A fruity note comes next, then a boozy rum-like note, both measured directly against espresso. A lactonic whipped-cream tone from the trade accord sits behind those. Under the whole thing run a light roasted-nut tone, a damp earthy note, a thin sour acidity and a faint cooling top.

Origin
Two different preparations share the name. Most retail iced coffee is ordinary hot-brewed coffee chilled over ice, sometimes brewed at double strength so the melting ice does not thin it. Cold brew steeps grounds in cool water for hours without heat, which is where the measured sweet, fruity and rum-like character comes from. There is no perfumery material behind this note. It is a reconstruction.
Usage in Perfumery
A base accord for lighter gourmand and summer compositions. It gives coffee weight with more lift and less roast than an espresso accord. It pairs with vanilla, cocoa, cream, almond and rum. Use coffee or espresso-bean when the brief wants the dark roasted end instead.
