Chervil
Note Profile
About
Soft green herb with faint anise
Scent Profile
Chervil smells of a soft, fresh green herb, between parsley and anise. A gentle sweetness and a faint liquorice edge sit over the leafy green. It is lighter and more delicate than parsley and much milder than tarragon or anise.

Materials That Can Make This Note
Perfumers can build Chervil from materials such as:
-
Estragole anisic · phenolic · anise
Smell words come from published sources.
A given perfume with this note may use some of these, or something else.
Origin
Chervil is the leaf of Anthriscus cerefolium, a delicate herb of the parsley family. The fresh herb holds only about 0.3% essential oil, and the seeds about 0.9%. The oil contains methylchavicol (estragole) and undecane. No perfumery house was found selling a chervil oil or absolute, so in a perfume the note is usually an accord.
Usage in Perfumery
Perfumers use chervil as a light, fresh green-herb touch in the top of herbal, green and aromatic accords. It softens parsley-type greens and adds a faint, sweet anise edge. It is a rare note and appears in only a handful of perfumes.
