Cocoa powder is the dry, defatted cocoa solid, and the note is the dusty version of chocolate rather than the rich one. It is bittersweet, warm, faintly earthy and lightly smoky, with roasted-nut edges and none of the fat or sugar of a bar.

Origin

Roasted and fermented Theobroma cacao beans are pressed to remove most of the cocoa butter, and the remaining cake is ground to a powder. Perfumery has no separate raw material for it. The note is carried by cocoa absolute, by pyrazine reconstructions built around 2,5-dimethylpyrazine.

Usage in Perfumery
