Rose Honey smells of honey first, thick and sweet, with rose sitting on top of it rather than beside it. A deep red rose floral note runs through it, not a dewy pink one. A jammy, cooked sugar sweetness shows underneath, from petals slow cooked in syrup.

Origin
A food preparation, not a perfumery raw material. Fresh rose petals or rose oil are combined with honey instead of the traditional sugar. Two commercial producers on different continents sell the same category: Pastili in Bulgaria stirs organic Damask rose oil into limited Bulgarian honeys under the ROSOVA name, and Roots Veyr in India layers fresh rose petals with natural honey and sun-cooks the result for weeks. Wikipedia dates the underlying tradition to gulkand, an Indian rose-petal preserve made with sugar rather than honey. No fragrance house or aroma supplier sells anything called rose honey, so what a perfumer means by the note is not established.
