About
Gin tonic is the cocktail rendered as a fragrance note. It is a cold citrus opening over a bitter, aromatic drink accord, not a single material. The drink is built as a sharp citrus snap on top, a cool and dry bitter accord through the heart, and a pale woody-musky floor underneath. The bitterness is the part that separates it from a plain cologne. It reads as bitter and dry rather than as sugar.

Gin Tonic opens with a sharp citrus snap, lemon zest, grapefruit, bitter orange and lime, cold rather than sweet. A cool, dry bitterness runs through the heart, the tonic half of the name, with a touch of peppermint. Juniper gives it an aromatic, herbal edge, with a peppery, gingery bite alongside it. A green, watery cucumber-peel note and a pale, musky cedarwood floor sit underneath, with a restrained boozy warmth rather than a strong spirit note.

Origin
There is no gin tonic raw material. The note is an accord a perfumer assembles, and the two published formulas disagree on how. Art de Parfum's Gin & Tonic Cologne lists juniper berry, grapefruit, lemon zest and cucumber peel on top, a gin and tonic accord in the heart, and ambergris, cedarwood, vetiver and white musk in the base. M. Micallef's GNTonic reaches the same impression from bitter orange, lime, ginger and peppermint, and Cafleurebon reports its heart of gin was built without juniper berry at all. So juniper is one route to the note and not a requirement of it.
Usage in Perfumery
Used as a top and heart structure in citrus aromatics and summer colognes, where the bitter tonic edge stops the citrus reading as sweet. It sits with juniper, lime, grapefruit, cucumber, ginger and mint above, and with cedarwood, vetiver, ambergris and white musk below.
