Hyssop has a fresh, green-herbal aroma with camphoraceous and slightly minty facets. It carries subtle floral and spicy undertones, evolving to reveal a resinous, almost medicinal depth as it dries down. The scent is vibrant yet complex, bridging aromatic and green notes.
Hyssop essential oil is extracted via steam distillation from the flowering tops and leaves of Hyssopus officinalis, a perennial herb native to the Mediterranean region. Cultivation occurs mainly in southern Europe and western Asia for both culinary and perfumery uses.
Perfumers use hyssop primarily in the heart or top notes of aromatic, fougère, and herbal compositions. It blends well with lavender, rosemary, sage, and citrus oils, adding a distinctive green brightness and complexity to herbal accords.
