About

Zucchini is the immature fruit of Cucurbita pepo, used in perfumery as an idea rather than an extract. There is no zucchini oil or absolute on sale. The note is built from green aldehydes and alcohols borrowed from the cucumber and melon palette.

Scent Profile

Green leads and it is the only claim two sources make independently: the cucumber study says 'C6 aldehydes and alcohols give cucumber its distinctive grassy, green aromas' and that 'green, grass-like flavors dominate in young fruits', and zucchini is always picked young. Aquatic_ozonic carries the watery, fresh cast of raw cucurbit flesh, set well below the published cucumber note's 0.62 because every account of zucchini calls the smell mild and neutral rather than crisp. Everything else is trace: a thin aldehydic edge from the C6 aldehydes, a faint fruity lift the pumpkin paper attributes to ethyl acetate, and a small herbal and cooling shading. The spreads are wide across the whole vector because no analysis of raw zucchini fruit itself was found.

Origin

Cucurbita pepo, picked young. The one species-level analysis reachable (PMC5602975) profiles C. pepo pulp and finds thirty-one volatiles, led by ethanol at 23.6 per cent, ethyl ether at 15.4 per cent, ethyl acetate at 12.9 per cent and 1-hexanol at 4.8 per cent. 1-hexanol is the odour-relevant one and the paper calls it 'floral and green'. No commercial extraction exists.

Usage in Perfumery

Reconstructed, not distilled. Perfumers reach for cis-3-hexenol, hexanal, violet leaf and the melon aldehydes to place a mild vegetal green in a top accord. It sits near cucumber and green melon and is used where cucumber would read too crisp and watery.
