Cooked fruit and sugar with no fruit named. A preserve accord, thicker and less fresh than the fruit it is made from.
Scent Profile
Jam smells rich and fruity, thick with cooked berries and apples rather than fresh ones. A sugary sweetness runs through it, close to vanilla sugar or caramel, sitting just under the fruit itself. A light sour, tart pectin edge keeps it from reading as plain syrup. The whole thing has a thickened, honeyed richness, like slow-simmered preserves rather than a single named fruit.

Origin
Jam is fruit boiled with sugar until it sets. No material is sold as plain jam. Every commercial product found names a fruit: Perfumer's Apprentice sell Berry Jam, The Flaming Candle sell Raspberry Jam. The cooked-jam smell is built rather than distilled. Furaneol smells caramel-like at high concentrations and of sweet strawberry when dilute, which is the jam effect in one molecule.
Usage in Perfumery
Heart of gourmand and fruity-gourmand builds, where a fruit has to read as cooked rather than picked. The Flaming Candle publish the standard shape: apple pectin and red cherry on top, strawberry and raspberry in the middle, "Sweet Grenadine, Vanilla Sugar" in the base.
