Scent Profile

Fruity leads. The study's two named drivers both put fruit first: beta-damascenone reads as "sweet, fruity, flora, honey, baked apple", and pentanal as "fruity, nutty, berry". Honeyed is the "honey" in that damascenone descriptor, and it is supported independently by the trade page's "hint of the sweet date fruit". Sweet_vanillic is the baked, cooked-sugar side of the same "baked apple" reading, backed by Fragrantica putting the term in "Sweets and gourmand smells" with "sweet" as its only prose. Nutty rests on one compound, pentanal, and is the number here most likely to be wrong. Green is hexanal, "grass-like, green", which is the fresh fruit's skin rather than the dried one. Floral and fresh_spice sit under the naming bar. Floral is the "flora" in the damascenone descriptor. Fresh_spice is the maceration's "light peppery" note, and that comes from leaves and twigs rather than from the fruit, so it is kept small.

Origin

Jujube is the fruit of Ziziphus jujuba, grown across China, Korea and the Mediterranean. It is eaten fresh but far more often dried, when it turns deep red-brown and wrinkled. There is no jujube fruit oil in ordinary trade, because the flesh yields too little aromatic oil. The one commercial product found, Aytz Chayim's Judean Sidr maceration, is a cold-pressed seed oil infused with leaves and twigs. It smells of "a hint of the sweet date fruit" plus "a light peppery scent with spice leafy green notes". So this vector rests mainly on a published HS-SPME-GC/MS study of the fruit's own volatiles.

Usage in Perfumery

A gourmand fruit note. Fragrantica files the term under "Sweets and gourmand smells" and its whole prose descriptor is "sweet". It sits where date or dried fig would sit, in the heart of an oriental or fruity-gourmand build, but lighter and less syrupy than either.
