Honey made from lavender nectar. The honey body leads and a herbaceous lavender thread runs through it. Softer and warmer than lavender oil, and less waxy and less animalic than plain honey.
Scent Profile
Lavender Honey smells like honey first, milder than a dark honey, with a herbaceous lavender thread running through it, warmer and softer than lavender oil itself. A rose-like floral note runs underneath, from the honey itself as much as from the lavender flower. A heliotrope-like sweetness adds a touch of vanilla, and it carries less of plain honey's wax and animal edge.

Origin
A food preparation, not a perfumery raw material. Bees working lavender or lavandin fields in Provence and in Spain produce a pale monofloral honey. Premiere Peau's honey page names the mechanism for why one honey differs from another: phenylacetaldehyde, phenylacetic acid and 2-phenylethanol carry the honey smell, and their ratio shifts with the nectar source. The page uses lavender honey against acacia honey as its own worked example. Two perfume houses sell a fragrance of this name, Thymes and IRFE, and both build it the same way - lavender, amber honey and heliotrope.
