About

Parsley is the essential oil or absolute of Petroselinum crispum, usually steam distilled from the leaves or seeds. It smells crisp, green and slightly peppery, with herbal, minty and earthy tones like crushed leaves. The seed oil is warmer, with a phenolic, faintly medicinal depth. Spicy or anise-like touches can appear later. It is used in the top or heart.

Parsley has a crisp, green, and slightly peppery aroma with subtle herbal, minty and earthy undertones. Its scent is fresh and vibrant, evoking the sensation of crushed leaves and garden herbs. The seed oil pulls the other way. Apiol is 30 to 50 per cent of it, and it carries a heavy phenolic warmth that reads as faintly medicinal. The note can reveal faintly spicy or anisic facets as it develops.
