Pumpkin Pie is a gourmand accord: baked pumpkin filling, sugar and pastry crust, with cinnamon, ginger and clove through the middle. It is not the gourd. Both trade sources build it the same way, spice and sugar first, the vegetable underneath.

Scent Profile

Warm_spice leads because both sources name the same three baking spices and Demeter names them before anything but the gourd itself: 'sugar, cinnamon, a touch of ginger and hint of cloves'. Village Craft repeats cinnamon in two tiers, mid and base. Sweet_vanillic is the sugar and the 'Vanilla Sugar' base, present in both sources and only just below the spice. Nutty is the pastry: 'freshly baked pie crust' and a named 'Pie Crust Accord'. That is an inference about what a baked-crust impression smells of, since Village Craft gives the accord no breakdown. Lactonic is the custard set of the filling. No source names butter, cream or egg, so it is held below the published pumpkin note's and given a wide spread. Fresh_spice is the ginger root, which lifts away from the cinnamon-clove mass. Earthy keeps some raw gourd alive. Neither source mentions it, but the pumpkin is still in the pie, so it is reduced rather than removed.

Origin

A prepared accord, not a natural. Demeter builds it as pumpkin plus sugar and three spices. Village Craft & Candle publishes a pyramid: Pumpkin Puree and a proprietary Pie Crust Accord on top, cinnamon, clove buds and ginger root in the middle, cinnamon leaf and vanilla sugar in the base.

Usage in Perfumery

Rare in fine fragrance and common in candles and fragrance oils, where autumn seasonal ranges carry it. One perfume on Fragrantica names it. It works as a whole dessert in one note, so it usually leads rather than supports.
