Natural wasabi is derived from the rhizome of Wasabia japonica, native to Japan, but in perfumery, the scent is typically recreated using aroma molecules such as allyl isothiocyanate and green accords. These are synthesized or isolated from related plants due to the scarcity and high cost of true wasabi.
