Chocolate cake is a gourmand accord that holds cocoa and cake together rather than letting either stand in for the other. A composed accord, not a distilled material. Perfumers build it from cocoa absolute or cocoa-type synthetics for the roasted part, vanillin and ethyl maltol for the sugar, and lactones or a buttery cream base for the frosting. Brand copy for this note lists the parts openly: Dua's Triple Chocolate Cake names milk chocolate, dark chocolate, chocolate pudding, vanilla, whipped cream and chocolate frosting in one line, and Demeter's Birthday Cake names chocolate cake, buttercream icing and icing flowers.

Usage in Perfumery

A base note in gourmand and sweet oriental compositions. It anchors a fragrance with edible warmth and pairs with vanilla, tonka, coffee, hazelnut and patchouli. Patchouli is the usual partner because it cuts the sugar and gives the cocoa somewhere dry to sit. Used at a high dose it flattens everything above it, so it is normally kept under a lighter top.
