Origin

(E)-5-methylhept-2-en-4-one, CAS 81925-81-7, FEMA 3761. Sold by Symrise for both flavour and fragrance use. It was first identified in hazelnuts in 1989. Both enantiomers smell of hazelnut. The (R)-form adds butter and chocolate and has a stronger impact. The (S)-form smells fattier.

Usage in Perfumery

Used to build hazelnut, praline and brown gourmand accords. Perfumer & Flavorist reports that at low levels it rounds off rose, sandalwood and gourmand ideas. At higher levels it gives a distinct hazelnut character, adds volume to brown flavours and adds richness to exotic fruit flavours. IFRA recommends no more than 0.2% in the fragrance concentrate.
