Roasted nuts is a gourmand accord, not a single extracted material. It smells of warm toasted kernels with a burnt edge, over caramel, honey and vanilla sweetness. Cashew, hazelnut, almond and macadamia are the nuts most often named, and a light dusting of warm spice sits with them.

Scent Profile

Nutty dominates: toasted kernels with a browned, bread-crust edge, read most clearly as hazelnut, almond and cashew. Sweet_vanillic follows as caramelised sugar and vanilla in the base. Coffee_cacao is real rather than incidental, because the same pyrazines that build this accord build chocolate and coffee. Warm_spice comes from the nutmeg and cinnamon in the heart, and smoky from the burnt facet of the roast itself. Honeyed sweetness sits alongside the caramel. Under those, a lactonic creamy-milk softness, a jammy fruity trace and a faint burnt-leather and bay-leaf edge.

Origin

There is no roasted-nut natural. The accord is built from roasted pyrazines, chiefly 2-ethyl-3-methylpyrazine and 2-acetylpyrazine, which are the same Maillard-reaction molecules that form when food is cooked and browned. ScenTree classifies 2-ethyl-3-methylpyrazine as burnt and nutty and notes it is used to reconstitute coffee, chocolate and hazelnut. Fragrance houses layer those pyrazines with nut aroma chemicals and a caramel-vanilla base to sell the finished accord.

Usage in Perfumery

Perfumers use roasted nuts in gourmand and dessert compositions, where it gives a savoury toasted counterweight to sugar. It reads across the whole composition rather than one tier: the pyrazines lift early, the nut and spice materials hold the heart, the caramel and vanilla base carries the drydown. It sits next to praline, halva and nougat and pairs with tonka, cocoa, coffee and tobacco. Overdosed it turns burnt and ashy.
